Glue-Ups, Thickness, and Food-Safe Woods
A cutting board is a glue-up first and a pretty pattern second. Edge-grain boards keep the long grain up and are faster to make; end-grain boards flip the strips after a first glue-up so knife edges hit fiber ends, which is kinder to edges but hungrier for clamps and flattening time. Use this designer to lock strip order and widths, then mill stock longer than the finished board so you can square and trim after glue-up—the cut list already adds trim allowance for that.
How to use this designer
- Set finished length and thickness, then add strips with species and width to build the pattern preview.
- Adjust the arrangement until the visual balance looks right on the canvas.
- Copy the cut list and mill blanks; glue in stages if the clamp capacity or panel width demands it.
Practical shop notes
Thickness around 1½″ is a durable sweet spot for end-grain; edge-grain can run thinner if the board is well supported. Prefer closed-pore hardwoods commonly used for food contact (maple, walnut, cherry) and avoid toxic or heavily treated species. Use a waterproof PVA or other adhesive rated for intermittent moisture; finish with food-safe oil/wax systems and re-oil when the surface looks dry. Flatten after glue-up before final dimensioning so you do not chase a twisted panel with the planer.
FAQ
Can I mix softwoods into the pattern?
Softwoods dent and cup faster under kitchen use. Keep them for decorative accents only if you accept uneven wear—or stick to hardwood throughout.
Why is the cut-list length longer than my board?
The list includes trim allowance so ends can be squared after glue-up and any joint slip cleaned up.
Is end-grain safer for knives?
End-grain is generally easier on edges and can “self-heal” minor cuts better; it still needs oil and should not go in the dishwasher.
How flat is flat enough?
Aim for no rock on a known-flat surface and even thickness within about 1/32″. Juice grooves are optional and cut after the blank is flat.
